Sweet Potato Souffle
1lb- 13oz. can sweet potatoes
1 apple, cored and chopped fine
8oz. can crushed pineapple, drained
1/4 chopped pecans
1 cup orange juice
2/3 cup sugar
1/4 cup butter
1 tsp. vanilla extract
Preheat oven to 350 degrees. Beat sweet potatoes in electric mixer or food processor until very smooth.
Beat in sugar, butter, egg, orange juice and vanilla, blending after each addition.
Stir in pineapple, apple and pecans.
Pour into buttered 1-qt. casserole and top with marshmallows.
Bake until marshmallows are brown (25-30 minutes).
