Orange Walnut Cake
1 cup butter, room temperature
1-1/2 cups all-purpose flour
1-1/2 tsps. baking powder
2 tbsp. grated orange rind
1/2 cup chopped walnuts
1-1/3 cups sugar
2 tbsp. orange juice
15oz. golden raisins
Cream butter and sugar until blended. Add eggs, one at a time, beating after each addition.
Mix flour and baking powder well.
Add to first mixture, mixing well. Add orange juice, rind, walnuts and raisins. Stir until well combined. Pour batter into greased and floured loaf pan.
Bake at 350 degrees for about 50 minutes.
Cool in pan for about 15 minutes.
Remove from pan and wrap in aluminum foil for storing.
